We did our Once a Month Meals cooking over the weekend. This was our easiest (kinda) one yet. We shopped Friday at 5pm and prepped some that night. More prep Saturday morning (Laura was up working on it at 6 when I went to play frisbee) and  then cooked all day. Yes, all day. By 6:30pm we had our meals done. After doing it for the 3rd time I’d say it’s still a LOT of work but the payoff of having a month of meals ready to go or ready to pop in the oven is worth it.

The other biggie is the quality of the meals. We’re not just making spam sandwiches here. This months recipes included-  Chocolate Strawberry Crumble Bars, Paleo Skirt Steak with Chimichurri, Blueberry Chicken Salad with Basil Aioli, and Paleo Balsamic Vegetable Mini Meatloaf.

If you struggle with having time during the week to make/prep meals, this is a great option that’s a lot of work on the front end but could have you eating great Paleo meals much easier during the week. And for your healthy lifestyle, consistency is the key!
