 Paleo Apple Glazed Meatballs

Source- Once A Month Meals


1 pound ground turkey
3 teaspoons garlic, minced
1 Tablespoon applesauce #1
0.375 cups green onions, sliced
0.33 cups almond meal
0.33 cups apple, peeled and shredded
0.5 teaspoons cayenne pepper
1 teaspoon sea salt #1
2 teaspoons cinnamon


1 cup apple juice
0.5 cup coconut aminos
1 teaspoon fresh ginger, grated
1 Tablespoon applesauce #2
1.5 Tablespoon arrowroot powder
0.5 teaspoon sea salt #2
0.25 teaspoon pepper
0.25 teaspoon cinnamon


In a large bowl combine ground turkey, garlic, applesauce #1, green onions, almond meal, apple, cayenne pepper, salt #1, and cinnamon. Form into rounded tablespoon sized meatballs, and place on baking sheet. Bake 400 for 20 minutes. Meanwhile, in a large skillet, whisk together apple juice, coconut aminos, ginger, applesauce #2, arrowroot flour, salt #2, pepper and nutmeg. Bring to a gentle boil, lower heat and simmer until sauce thickens. When meatballs have cooked, place in skillet with sauce, gently pushing around so that the meatballs are coated in sauce.

Freezing Directions:

Prepare as directed above. Allow to cool completely. Divide meatballs and sauce into freezer bags, label and freeze. TO SERVE: Thaw. Reheat in microwave for 1-2 minutes, until warmed through.
